"Il Silene" is an extra-virgin olive oil produced from single-cultivated de-stoned olives of the Seggiano wild olive tree. It is processed according to an innovative technique, the origins of which go back to Roman times. In his treatise on agriculture De Rerum Rustica, the Latin writer Columella recounts about the oil destined to the king being produced with olives that had their stones removed. The technique foresees that the olives are de-stoned by a special process before the oil is produced. The pulp obtained, crushed and transformed into husks is immediately amalgamated for approximately 45-50 minutes in a type of mixing machine and then passes through a decanter that decants and extracts the oil, separating it from the pulp without any addition of water.
The technique allows a complete extraction of the noble parts of the olive pulp and particularly the perfumes and polyphenols.
